The process of a red honey is tedious, albeit less tedious then it's black variant, it requires care to maximize the harvest. With all the mucilage attached the coffee needs to be turned every 30 minutes to prevent molding and bugs from damaging the coffee. This coffee is roasted low and slow over a longer duration to really maximize the Maillard reaction bringing out the sweetest taste.
